Borage - It’s not stew, it’s a microgreen.

Have you ever seen borage or had it growing in your flower beds? Although I grew up landscaping and working in a garden center I never knew what borage was until I started growing microgreens. Fully grown, as a plant, borage has a beautiful blue star shaped flower. Although it’s flower is beautiful it has so many other uses than its beauty!

Borage grows into a beautiful microgreen. Bigger than traditional microgreens the leaves and stems of Borage have a flavor similar to melon or cucumber with a succulent like leaf! And the goodness of borage doesn’t stop at it flavor or texture, like all the microgreens we have written about it has some amazing benefits! As a medicinal plant borage is used as a cough and fever suppressant, and has properties that have been proven to reduce inflammation of the lungs. It is also used to combat depression along with many other uses. As a flower it can be used in salads and as a garnish to many dishes.


The Borage flower also has a cucumber and melon flavor, like it’s microgreen leaves. With a striking blue beauty it is a great addition to salads, desserts, and more! It always amazes me how many items grow in a flower garden that can be used in salads and dishes.
